Okinawa Pancakes

I made these pancakes, as I remembered, like them when my grandmother would make them during typhoon season. But there is something missing which I will try to figure out for next time.
These are not some aliens stranded on earth but chiffon cakes resting and cooling down on top of some glass jars. I use this method so that the cake forms do not collapse while keeping the sponge texture intact.
